This rather unconventional blend of Chardonnay (90%) and Sauvignon Blanc (10%) is made by leaving the must separated from the skin to ferment in small oak barrels during 1 month. Thereafter the new wine is aged for 1 year in 2500 litres oak vats before resting in the bottle for at least 6 months.
Intense straw yellow in colour. Rich and complex bouquet with hints of minerals and ripe yellow fruits, it is slightly boisé on the nose.
A mouthful of great aromatic potential, on the palate there is a little sour whiff with savoury long lingering finish - a long lasting pleasure!
Excellent to accompany very flavoured fish, seasoned cheese and white meat. Serving temperature: 12° - 14°
