Production is limited to around three thousand bottles per year. Ageing in large barrels is extended to three years. This is followed by at least another twelve months in the bottle before it is put up for sale. The peculiarity of Podere ai Valloni is the use of three grape varieties, Uva Rara (10%), which lightens the wine, along with the “typical” blend of Nebbiolo 70% and Vespolina (20%). Most other producers use only Vespolina in combination with Nebbiolo for their Boca. The result is a fine, elegant wine with great expressive power that wonderfully reflects the terroir of the Cru Vigna Cristiana. As of 2011, Podere ai Valloni is certified organic.
